Ingredients

4 Potatoes 
1 Tbsp Vegetable Oil
Next! Bac*n Style Strips 
(Vegan) Butter
(Vegan) Grated Cheese
(Vegan) Sour Cream
Bake For Another 10 Minutes (230°c)
Top With Spring Onion

Method

  1. Wash potatoes and prick all over with either a fork or a knife

  2. Lightly cover potatoes with Vegetable oil.

  3. Place potatoes on the middle shelf of the oven and Bake for 45 minutes at 230°c.

  4. While the potatoes are baking, chop the desired amount of NEXT! Bac*n strips into small squares.

  5. Heat the remaining vegetable oil in a pan on the stove and add the Bac*n when oil is hot. Fry until desired crispiness is reached (5 minutes should do the trick) turning regularly to ensure they don’t stick to the pan.

  6. Remove potatoes from the oven after 45 minutes and leave to cool for 3-5 minutes before cutting.

  7. Cut a rectangle along the top of the potato, so that the skin can be peeled back and the potato top opened enough to insert ingredients.

  8. Using a fork, gently pull apart and mash the inside top levels of potato while applying the desired amount of vegan butter.

  9. Stuff until overflowing with vegan cheese and return to the oven for a further 10 minutes.

  10. Remove from the oven and add the vegan sour cream and fried Bac*n pieces with spring onion to top.
